About the Job: An opportunity has a risen for a colleague to join our Culinary team in Jumeirah Zabeel Saray, as a Chef De Cuisine. The main duties and responsibilities of this role: To ensure that the site provides the highest quality menu and service through passion, innovation and training. Developing and leading a high performance team, meet agreed performance objectives. Accountable to deliver revenue and profits, maintain and enhance brand standards and position the restaurant as the preferred destination within the competive set . Drive and establish the respective brand/ concept with entrepreneur spirit Operational 1. Coordinate on a daily basis with Executive Chef regarding outlet issues, operations and performance. 2. Communicate via regular team meetings, 1-1 discussions and training sessions. Attend group Chef de Cuisine meetings. 3. Chef de Cuisine should ensure all equipment is working to the standard required by the business and if issues are found that they are reported and actioned by the company maintenance team/company. 4. Any LPO requirements should be arranged and followed up to ensure repairs and purchases are made when needed. 5. Build and maintain working relationships with central purchasing. Source all seasonal ingredients from the best possible suppliers within budget. 6. When required to do so ensure all menus are seasonal and creative using the finest ingredients and working within the concept. Arrange and attend all menu tastings. 7. Ensure all cleaning schedules are being followed and completed to the required business standard. Action any areas not to standard immediately by allocating responsibility to the necessary parties with a follow up and sign off process being put in to place. 8. Be actively involved in ways to maintain and increase business levels. Being available for any marketing or publishing projects in regards the restaurant in conjunction with the marketing team. 9. Carry out any recipe writing, food photography for any publication. 10. Ensure daily, weekly and monthly administration is to company standards and meets set deadlines. Arranging of any external and internal events. 11. Arrange all team building events or outings. 12. To ensure all rotation of stock is done correctly and all chefs follow the correct storage procedures ensuring the appropriate stock level. 13. Monitor and account for food wastage within the active inventory system. 14. Have full control on all inventory and purchasing and ensure all inventory information is posted on the system before cut off deadline. 15. Be aware of direct competition and threats to the business, be aware of local and international food trends. 16. Respond to any changes in the Food and Beverage function as dictated by the industry or company. 17. Production methods, presentation and improved guest satisfaction. 18. Any other duties as reasonably requested by the management. 19. Health & Safety 20. Ensure delivering the Jumeirah Food Safety program and all health and safety papers are up to date and colleagues are fully trained to the required business levels. Regularly assess the working practices within the outlet and action any issues immediately with the Health and safety team. 21. Ensure all daily kitchen records and labelling are maintained and up to date at all times. Ensure that the food hygiene manuals are a working document and up to date at all times. 22. Is fully responsible and accountable for ensuring that the full Kitchen / Stewarding area operates in accordance to local health and hygiene legislations. 23. HR/Training 24. Identify training needs and deliver training to drive sales and profits. Conduct timely performance reviews for the kitchen brigade as per company requirements. 25. Be actively involved in creating standard recipes, descriptions / Hook - Line - Sinker documentation 26. Ensure the kitchen uniform and personal hygiene requirements are adhered to of all staff members. 27. Inspire and motivate the team to produce food to the business specifications and achieve sales and financial targets. 28. Praise and recognise good performance to manage staff recognition programme in line with staff expectations. 29. Recruit team members in line with company and statutory requirements. 30. Deal with poor performance through performance discussions and where necessary instigate formal disciplinary proceedings in conjunction with HR policies. 31. Ensures that all vacation planing is completed, updated and in line with business requirement, Right people, right place/time. 32. The Chef de Cuisine is to ensure the development and growth of colleagues and be fully involved in overseeing the recruitment of all new culinary and stewarding colleagues , setting KPI’s , maintaining training calendars, conducting and overseeing appraisals and providing regular feedback and coaching for all staff in the kitchen. 33.
