About the Role: An exciting role has arisen for a highly skilled and motivated Sr. Chef de Partie to join our team. Your key duties will include: To supervise and check every dish sent from the section to ensure business standards are maintained. If an issue arises within the section a Sr. CDP must be able to communicate this to a senior and action any further directions given to them. Is able to run each section of the kitchen, managing MEP lists and producing food as directed by the Junior Sous Chef and Sous Chef and to present it at the times required. To manage service during busy periods. In the absence of senior chefs manages the kitchen ensuring all set standards and quality procedures are adhered to. Takes responsibility for the team’s actions and decisions made. Actively manage all aspects of a section and is able to manage the junior kitchen brigade and the delegating of tasks accordingly. Ensure all handovers and observations are discussed with senior chefs regularly. Collating ingredient orders per section and managing stock levels. Highlights any product shortages (all operational needs). Liaises with the Sous/HC on product orders. Check produce quality adheres to the standards set by the business. Any product returned due to not being to the correct standard needs to re-arranged and supplied. To have the responsibility, designated ownership and up keep of all equipment used in the kitchen, not just own section. Reports any underperforming or faulty equipment to a senior chef. Should monitor the produce being assigned to their section of the kitchen and report any issues to senior chef immediately. Any issues should be clearly communicated to the senior with direction of what is required. Manage staff training with the Sous Chef and maintain an active training plan/programme for each team member. To ensure cleaning schedules are followed by stewards and signed off by Sous or Head Chef. To be actively involved in all menu tastings. Ensures correct handling and usage of all equipment. As Sr. CDP and section in charge responsible for refrigeration cleaning, stock rotation, date coding and section deep cleaning. In the absence of a senior chef ensure the daily kitchen records and labelling standards are being maintained at all times. Any other duties as may reasonably have requested by the management. About You: In order to be considered for this role, you must possess the following selection criteria: Tertiary Education or Diploma in Culinary Arts Management Minimum of 3 years experience as a Demi Chef de Partie Role in a standalone/branded restaurant Can hold a conversation in English with confidence. Listens, understands and acts accordingly. Background in different cuisine Must know and be able to demonstrate good knife skills. Must be able to operate all equipment as required. Must be signed off on the safe use of all equipment especially those that are dangerous.
